Tortellini pasta is the homemade pasta recipe. Origin from Italian cuisine, now a days people looking for homemade pasta not purchased from the market. They make own pasta in their kitchen and cooking as they’re required, so here this the recipe for tortellini pasta. Its stuffed pasta you can stuffed as you like that is maybe any vegetable and ground meat. vegetables you can use spinach, potato, mushroom, zucchini, ricotta cheese and meat may be beef, chicken and lamb.

If you are making this recipe in your home, different sauce can be prepared for this stuffed pasta, it may be cheese sauce or tomato sauce. If you don’t like pasta You can simple saute with garlic, butter and seasoning with salt, pepper. This will be called tortellini agli olio.

Ingredients

  • FOR TORTELLINI DOUGH
  • Flour........................................................2 cup
  • Eggs...........................................................3 no
  • Extra virgin Olive Oil...........................1 tbsp
  • Salt..............................................................A pinch
  • Water.........................................................1/4 cup
  • FOR FILLING
  • Spinach....................................................200 gm
  • Ricotta cheese......................................100 gm
  • Basil leaves............................................1 sprig
  • FOR SAUCE
  • Butter........................................................50 gm
  • Flour.........................................................50 gm
  • Milk...........................................................500 ml
  • Cheese....................................................150 gm
  • salt.............................................................1 tbsp
  • sugar.........................................................1 tbsp
  • oregano...................................................A pinch
  • FOR GARNISHING
  • Cherry tomato.........................................4-5 no
  • Basil leaves................................................4-5 leaf
  • Radish..........................................................2 no
  • Parmesan cheese....................................as u need

Instructions

  1. For dough, you can make by hand or food processor.In a large mixing bowl take flour,salt,olive oil and eggs knead together until it smooth.Wrap the dough in some plastic wrap and keep in the freeze for about 1 hour.
  2. Blanch the spinach and drain well ,squeeze it and chop . In a small bowl mix together ricotta cheese , blanched chopped spinach and basil leaves mix well by spoon.
  3. Take out dough from refrigerator and cut the into 6 equal pieces and make dough sheet by pasta machine or by roller.
  4. Place the sheets in your working table and cut out tortellini rounds,fill with ricotta mixture and shape them niceley.
  5. FOR SAUCE
  6. In a heavy saucepan heat butter and add flour in it, stire together until it make perfect roux.then add milk and cook for some minutes until it become a sauce , seasoning with salt,pepper and cheese.
  7. Blanch the tortellini pasta and drain well saute with butter, salt,pepper and herbs.
  8. Place in serving plate and pour cheese sauce on top of pasta , gratinate by salamander with cheese.
  9. Served with garlic bread , parmesan shaving and garnish with fried basil leaves,cherry tomato and sliced radish.
