Ingredients

  • 1 Fillet Sea bass fish

  • 1 Cup Noodle

  • 2 tbsp Chopped garlic

  • 1 tbsp Julienne ginger

  • 2 tbsp Chopped onion

  • 1/2 cup Diced Bell pepper

  • 1/4 cup Diced Onion

  • Snow peas

  • Spring onion

  • Chopped cilantro

  • Oil for Frying

  • For Batter
  • 1/2 cup All purpose flour

  • 1/2 cup Corn flour

  • 1 no Egg

  • For Sauce
  • 1 tbsp Sichuan sauce

  • Vinegar

  • Dark soya sauce

  • Sesame oil

Directions

  • Take fish, wash well. Diced, and strain well. Mix with egg, salt, crushed pepper, all-purpose flour, and cornflour. Add little water, and mix well. Keep in a chiller for 20 minutes.

  • After this, take marinated fish from the chiller. Heat fryer, and fry the fish separately. Fry, till it turns crispy, and golden color. Then keep all fried fish keep in a bowl, and keep aside.

  • Bring wok, and put sesame oil. Heat the oil. Add chopped garlic, stir it. Then add chopped onion, and ginger. Again stir for a couple of minutes.

    Take the all-diced vegetable and snow peas. Add all the vegetables, and again stir well with high fire.

  • Slow the fire, then put the Sichuan sauce, soya sauce, and 1/2 cup of stock. Fire high, and again stir well for a couple of minutes.
  • Then add crispy fish and seasoning. Stir with fire. Check to season.

  • Sprinkle chopped cilantro, and transfer to a serving bowl.

The batter has to be prepared well in advance and should be kept in an airtight container. So that it doesn’t brown too much.

I used the best quality of batter I could find, which was a flour mix made with whole-grain flour, cornstarch, and tapioca starch. It was mixed very thoroughly.
