VEGAN POACHED PEARS


DESSERT RECIPE

Poached pears are prepared in sugar syrup, full of wine and citrus zests and this mixture is brought to boil, the pears need to slightly firm. The dessert is served cold or lukewarm. It is also possible to add ginger and green cardamom and to maintain the red colour with a little raspberry or black-currant liqueur.

Ingredients

  • Pears.................................................................2 No
  • Dry Red wine................................................250 Ml
  • Water................................................................4 Cup
  • Cloves..............................................................2 Whole
  • Cinnamon stick............................................1 No
  • Sugar...............................................................80 gm
  • Strawberry....................................................80 Gm
  • Pomegranate juice....................................1 Cup
  • Orange zest.................................................1/2 Tsp
  • Corn flour....................................................5-10 Gm
  • Vegan whipping cream..........................2 Tbsp

Instructions

  1. Boil the water in a heavy saucepan and add sugar,cloves,cinnamon stick, orange zest and pomegranate juice.

  2. Peel the pears nicely and place in syrup mixture and simmer for 10 to 15 minutes.

  3. Whenever pears will be nicely poached , take out from the mixture and keep it in refrigerator for 30 minutes. 

  4. FOR STRAWBERRY COMPOTE...

    In a same time boil sugar and water in a saucepan .Then add strawberry in it  boil for 2-3 minutes when it will be softened , add gently mixture of red wine and corn flour. Set aside and keep it  in a freeze.

  5. Take a serving bowl and pour the strawberry compote and place the half of poached pears on it, and serve with piping vegan whip cream.

  6. Garnish with caramelized strip and a sprig of mint leaves.
