MUTABAL SALAD

Mutabal salad comes from the origin of Lebanese cuisine. Basically, it is one type of cool dip, perfect with meat dishes and summer meal. The best ingredients are Roasted eggplant, tahini, mashed garlic, lemon, olive oil, and yogurt.

Ingredients

  • Eggplant large..........................4-6 no
  • Tahini paste................................1/2 cup
  • Yoghurt.........................................1/2cuo
  • Lemon juice.................................3-4 tbsp
  • salt.................................................to taste
  • chopped garlic..........................1/2 tbsp
  • Mint..............................................1 spring
  • Pomegranate seed ..................1 tb sp
  • Extra virgin olive oil................4-5 tbsp

Instructions

  1. Roast the eggplant at 180 degree for 20-25 minutes ,whenever done set aside for cool it.Peel the skin and remove out seeds from eggplant and chop it.

  2. In a mixing bowl combine together tahini,lemon juice,salt,garlic,olive oil and chopped eggplant.mix it very well and taste it , and add salt , lemon juice as per your taste.

  3. I always preferred before serving just keep in refrigerator for 30 minute for which it will give best result.

  4. Take out from freezer and served in a salad bowl and garnishing with mint spring and olive oil.
