Ingredients

  • 2.5 lb Large diced chicken

  • 4 tbsp Oil (sesame/refined)

  • 1/2 cup Dark soya

  • 1/4 cup White vinegar

  • 2 no Bay leaves

  • 1 tbsp Salt

  • 5 cup chicken Broth

  • 1/2 tbsp Crushed pepper

  • 1/2 cup Coconut Milk

  • Chopped cilantro

  • 2 tbsp Chopped garlic

  • 2 tbsp Chopped ginger

  • 1 no Large onion sliced

Directions

  • Take diced chicken in a large mixing bowl, add little vinegar, soya sauce, salt, and garlic. Mixed well. keep in a chiller for 30 minutes.

  • Remove the chicken. Heat oil in a large heavy skillet pan. Pur bay leaves, and sliced onion. Stir it. When the onions are softened, add chopped garlic, and ginger. Saute it for a couple of minutes.
  • Then add chicken, and cooked with slow medium fire. When the chicken is half cooked, add chicken stock, remaining vinegar, and soya sauce. Stir it, and cover it.
  • Then simmered for more than a couple of minutes until the meat is tender and flavorful. Check the seasoning.
  • Finish with adding coconut milk, and stir well.
  • Transfer to a serving bowl. Served with rice.
