  • Start by pureeing the mangoes; you can use a food processor or a heavy-duty blender.
  • Heat butter in a heavy frying pan, add garlic and stir until brown.
  • Then pour mango puree, and stir with adding little water.
  • Reduce fire. Add salt, sugar, fresh thyme, crushed pepper, and lemon juice.
  • Leave it for simmering. Check the seasoning and consistency.
  • Off the fire, transfer it into a bowl.
  • Then keep in the refrigerator, and serve cold as side dips or accompaniments.
