Ingredients

  • 1 cup Thigh chicken skin less, diced

  • 3 cup White stock

  • 1 cup Diced carrot, celery, new baby potato

  • 1 tbsp Chopped garlic

  • 1 no Medium sized onion, sliced

  • 2 tbsp Chopped pepper

  • 2 tbsp Olive oil

  • 1/2 tbsp Cumin powder

  • Chopped thyme

  • Salt as required

  • Crushed pepper

  • Chopped parsley

  • 1 tbsp Unsalted butter

  • Bay leaves

Directions

  • Heat olive oil in a pot. Put chopped garlic, stir until brown. Add sliced onion, and again cook for a couple of minutes.
  • When the onions are cooked, then add one cup of diced chicken. Stir with medium fire without adding any stock and vegetables for 4 to 5 minutes.
  • Then add vegetable, thyme, and butter. Stir it. Add all seasoning, and put 3 cups of chicken stock.
  • Slow the fire, and cover with a lid. Cook for half an hour.
  • After this, check the consistency, and seasoning. If it need add more stock, and salt, pepper.
  • If it is fine, off the fire. remove pot, and transfer to a serving bowl.
  • Garnish with a sprig of thyme, and accompaniment with boiled rice.
