It can be served with an appetizer like a french fry, Jalepino fritter, Arancini ball, and crispy baked lamb fries.

Pineapple Pepper Salsa

1 can (14 oz.) crushed pineapple, drained and chopped

1/3 cup finely chopped red onion

1/3 cup chopped bell pepper

1 jalapeño, seeded and minced

1/2 tsp. sea salt or kosher salt

Fresh cilantro leaves, minced

1 tbsp fresh lime juice (from 2 limes)

1/2 ground cumin 1 habanero pepper, seeded and minced (optional)

Together mix well all the ingredients in a bowl. Check the seasoning.

Ingredients

  • 4 thin slices Lamb loin

  • 1 cup Grated mozzarella

  • 1 cup French fry

  • 1/2 cup Pineapple salsa

  • 1 tbsp Olive oil

  • Salt as required

  • Crushed pepper

  • Chilly flakes

  • Chopped parsley

  • 1/2 tbsp Chopped garlic

  • Oil for Frying

Directions

  • Marinate the Lamb loin slices with olive oil, salt, pepper, and garlic. Preheat the griddle. Place the marinated lamb slices, and grill well on both sides.

  • Remove the cooked meat, and julienne it.

  • Grate the mozzarella cheese, and fry the potato fry until crispy or golden brown.
  • Make the pineapple pepper salsa, which is discussed above.

  • Bring a serving bowl, place the french fry, and cooked julienne meat. Then put the topping of grated cheese, with a sprinkle of chilly flake, chopped parsley, and little olive oil. Baked in the salamander.

  • When it is baked, remove, and put the salsa on top of it. Served hot.
