Ingredients

  • 1 no Chicken Breast

  • 1 cup Marsala wine

  • 1 tbsp Unsalted Butter

  • 1/2 cup Cooking Cream

  • 2 cup White stock

  • 10-12 no Button Mushroom

  • fresh thyme

  • Parsley sprig

  • Salt as required

  • Crushed pepper

  • 2 tbsp Olive oil

  • Chopped garlic, celery, and Onion

Directions

  • Bring chicken breast, wash well. Marinade with olive oil, salt, crushed pepper, chopped garlic, chopped thyme, chopped parsley. Marinate well. Keep in a bowl. Pour 1/2 cup Marsala wine over on chicken. Set in a chiller for an hour.

  • Heat olive oil in a heavy pan, add chopped garlic, chopped celery, chopped onion, and a bay leaf. Stir it. Then add sliced mushroom, cook for 3 to 4 minutes with slow medium fire.

  • When the mushrooms appear golden in color, add 1/2 cup of vegetable stock, and wine. Simmer it for at least 5 to 10 minutes.
  • Add cooking cream. Simmer for a couple of minutes or the sauce until thickened. Add Seasoning.

  • Preheat the griller, remove the chicken from the chiller. Place on it, and grilled both sides of the chicken. Check the core temperature, and when it’s well cooked, take it out, and place it on a serving plate.

  • Reheat the sauce, pour over the chicken.
  • Served hot with mashed potato, and grilled vegetable.
