Ingredients

  • 2 no Lamb chops

  • 1 no Onion, chopped

  • 2 no Garlic cloves, chopped

  • 2 tbsp Bread crumb

  • 5 no Dry apricot, chopped

  • 1 no Red apple

  • 1/2 tbsp Chopped green onion

  • 1/2 cup Cooking cream

  • 1 tbsp Chopped bell pepper

  • Salt as required

  • Crushed pepper as required

  • 1 no Large parboiled potato

  • 2 tbsp Unsalted butter

  • Fresh Rosemary

  • Parsley chops

Directions

  • Preheat oven to 170 degrees F.
  • Melt butter in a large skillet, cook onion, garlic, and celery. Stirring until the onion softens. Stir in bread crumbs, and dry chopped apricot.
  • Core apples. Pierce apple in several places with a fork. Press bread crumb mixture into apple centers.
  • Place in an oven tray. Melt extra butter. Brush all over the apples. Bake, uncovered about 30 minutes.
  • Marinate the lamb chops with salt, crushed pepper, fresh herbs, and chopped parsley.
  • Heat oil in a pan. cook lamb chop, uncovered about 3 minutes on each side or until golden browned.
  • Place lamb chop in the same oven tray with apples. Cover with aluminum foil. Bake with apple for about 10 minutes or until lamb is cooked to the desired degree of doneness.
  • For the sauce, in a pan heat oil. Add chopped onion, and celery, stir. Then add cream, pepper, and green onions. simmer for 2 minutes. Reduce the fire, check to season. Transfer to a bowl.
  • Take out the lamb chops, and stuffed apple from the oven. Place on a serving plate. Drizzle with sauce, and serve with mashed potato.
