Basically Arabic mix grilled platter goes along with the garlic sauce and pickle vegetable (Arabic pickle). Made of carrot, gherkin, cauliflower and jalapeño. Blanch the all vegetable with water, vinegar and salt with peppercorn and bay leaf.

 

 

I can not never forget to say that, this recipe goes well with the Pewaz salad, this salad also from Egyptian cuisine. Prepared with local parsley or Arabic parsley and bell pepper. Not only capsicum also you can add white onion and tomato, dressing with salt, crushed pepper, lemon juice and sumac spices.

Ingredients

  • Lamb chop............................6 no
  • Beef mince...........................240 gm
  • Chicken breast(large cube)....240 gm
  • Lamb boneless(large cube)....240 gm
  • Tomato paste..........................4-6 tbsp
  • Olive oil......................................4 tbsp
  • Garlic paste...............................2 tbsp
  • Lemon juice...............................1 tbsp
  • Orange zest...............................1/2 tbsp
  • Hung Curd..................................1 tbsp
  • Arabic chilly paste...................1 tbsp optional--Sambal chilly paste
  • Cumin powder.........................1/2 tbsp
  • Arabic pickle...........................1/2 cup
  • Mayonnaise..............................1/2 cup
  • Garlic cloves...............................2 no
  • Salt ..............................................to taste
  • Crushed pepper.....................to taste
  • Bell Pepper..................for pewaz salad
  • Arabic parsley............for pewaz salad

Instructions

  1. In a mixing bowl, combine together olive oil, garlic paste, orange zest, cumin powder, little hung curd, salt and tomato paste and mix well. Marinate with lamb chop and shish kebab (cubed lamb boneless).Skewer the shish kebab and Keep aside for 30 minutes

  2. Other hand takes a bowl and add hung curd, cumin powder, salt, lemon juice, chopped garlic or you can use garlic paste and crushed pepper mix well. Marinate with shish tow (cube chicken boneless), skewer it and keep aside for 30 minutes.

  3. Take beef mince and add chopped garlic, salt, lemon juice and crushed pepper, mix well. Take all the meat item from the marinade and grilled on a over medium preheat griller, grilled the each side for 4-6 minute and cover with a bowl. This time you have to sure that don't over grilled these meat items, otherwise it will be rubbery. Checked with a thermometer for sure it cooked or not. After this remove the meat item from griller and rest for 2-3 minutes.

  4. Make a salad with bunches of Arabic parsley and fine julienne bell pepper and seasoning with salt, lemon juice and sumac, mix well. For garlic sauce, blend mayonnaise and garlic cloves, mix well keep in two separate sauce bowl. 

  5. Divide the meat items in 2 serving plates and serve with pewaz salad, garlic sauce and Arabic pickle.
